Ingredients

  • 250 g - spaghetti
  • 1/4 cup - cheddar cheese
  • 2 - capsicums (finely chopped)
  • 4 - onions (thinly sliced)
  • 2 - carrots (peeled and grated)
  • 1/2 cup - cabbage (finely chopped)
  • 1 - green chilli
  • 4 - tomatoes (blanched and made into puree)
  • 1/4 tsp - ginger-garlic-green chillies paste
  • 1/4 tsp - cumin seeds
  • 1/2 cup - milk
  • 4 tsp - lemon juice
  • oil
  • 1 tsp - butter
  • salt to taste
  • coriander leaves (finely chopped) for garnishing

How to Make Cheesy Spaghetti Delight

  • Dissolve 1/2 tsp of salt in 2.5 litres of water and bring it to boil.
  • Add a few drops of cooking oil.
  • Break the spaghetti into halves and gradually immerse them into the boiling water and continue to cook for 10-12 mins, stirring occasionally.
  • Drain the cooked spaghetti.
  • Rinse well in fresh cold water under a tap and keep aside.
  • Heat oil and butter together in a pan.
  • Add the cumin seeds and fry well.
  • Add the sliced onions and cook until they turn transparent and slightly pink.
  • Add carrots, green chilli and tomatoes. Saute.
  • Then add capsicum, cabbage and ginger-garlic-chillies paste; mix and fry well.
  • When the mixture is half cooked, add salt and milk.
  • Cook until the milk evaporates.
  • Add the grated cheese, mix well and fry for 5-8 mins.
  • Add the boiled spaghetti and mix well.
  • Mix lemon juice.
  • Remove from the flame and garnish with chopped coriander leaves.
  • Serve hot.
