  • 9 portobello mushrooms, stalks removed
  • ¼ cup olive oil
  • 6 scallions, sliced
  • 2 bunches baby spinach leaves
  • 1 cup boiled rice
  • 1 cup grated cheese
  • Salt and black pepper to taste

How to Make Cheesy Spinach Stuffed Mushrooms

  • Place the mushrooms, gill side up, in a large roasting pan, drizzle it with 1 tablespoon of the oil.
  • Cook it in a pre heated oven at 400 degrees F for 6-8 minutes.
  • Meanwhile, heat the remaining oil in a skillet, add the scallions and sauté for 3-4 minutes.
  • Gradually add the spinach, stirring until wilted.
  • Add the rice and half the cheese and season to taste, then mix well.
  • Remove the mushrooms from the oven and divide the spinach mixture among the caps.
  • Sprinkle with the remaining cheese and cook for another 8-10 minutes.
