  • 2 chicken, 800 gms.
  • 12 whole madras onions (shallots)
  • 15 pods garlic
  • 3 tomatoes
  • 8 red chillies
  • 20 gms. black pepper
  • 15 gms. fennel seeds
  • 10 gms. cumin
  • 10 gms. fenugreek
  • Salt to taste
  • ¼ tsp. turmeric

How to Make Chettinad Kozhi Milagai Varuval (Chicken Pepper Fry)

  • Clean and cut each chicken into 8 pieces.
  • Peel garlic and madras onions.
  • Dry roast red chillies, black pepper and half the fennel and cumin.
  • Pound them into a course powder, adding onions and garlic alongwith spices.
  • Heat oil in a kadai, add whole fenugreek and fennel and roughly chopped tomatoes.
  • Add chicken and fry well on high heat till it is seared.
  • Add salt and turmeric and pounded masala and fry well. Cover and cook till done.
