  • 1 kg. mutton, cut into small pieces
  • 1 coconut
  • 20 red chillies
  • 1 & ½ pods garlic
  • 150 gms. madras onions
  • 1 tsp. fennel (saunf)
  • 1 tsp. fenugreek (methi seeds)
  • 2 sprigs curry leaves
  • ½ tsp. turmeric
  • Salt to taste
  • 150 ml. oil

How to Make Chettinad Uppu Curry (Mutton Salt Curry)

  • Heat oil in a kadhai, add fenugreek and curry leaves.
  • When they crackle, add sliced madras onions and peeled and cut garlic.
  • Add lamb, turmeric and fry well.
  • Add salt and just enough water to cover meat. Cover and cook.
  • Add coconut into ½” cubes when meat is half done.
  • Cook till dry, continue frying till meat is done.
  • For a bright colour, add rogan or chilli powder.
