Chicken a la King or King-style chicken was a popular restaurant dish in many parts of the world in the mid 20th century. Chicken a la King is made up of diced chicken in a cream sauce, along with mushrooms and vegetables. The dish is served over rice, pasta, or bread.

  • 75 ml. vegetable oil
  • 2 onions
  • 2 green peppers seeded and chopped into small dice
  • 375 gm mushroom, chopped
  • 75 gm plain flour
  • 150 ml. milk, warmed
  • Half litre hot chicken stock
  • 750 gm cooked diced chicken
  • Half spoon of paprika
  • Pinch of salt
  • 120 gm. single cream
  • Half tbsp. lemon juice

How to Make Chicken a la King

  • 1. Heat the oil in a pan and fry the onion and peppers until soft.
  • 2. Add the mushrooms and cook for a further 2 mins.
  • 3. Stir in the flour and cook for 1 minute, then carefully stir in the milk making sure that there are no lumps.
  • 4. Add the stock, stir well and simmer for 3 minutes until thickened.
  • 5. Add the chicken, salt and paprika.
  • 6. Heat through for about 5-6 minutes.
  • 7. Remove from the heat.
  • 8. Put a little of the liquid into a bowl, carefully stir in the cream and lemon juice.
  • 9. Add the chicken mixture and serve.
  • 10. Serve with rice, baked potatoes or barbequed vegetables.
