Ingredients

  • 1 lb - boneless skinless chicken, cut into 1 inch cubes
  • 2 each - potatoes, tomatoes, bell peppers - cut into 1 inch cubes
  • Bamboo skewers - as required
  • For the marinade:
  • 1/4 cup - yogurt
  • 1 tsp each - ginger-garlic paste
  • 1 tsp - green chilli paste
  • 1 tsp - cumin powder
  • 1 tsp - coriander powder
  • 1 tsp - aniseed
  • 1/4 tsp - turmeric powder
  • Chilli powder to taste
  • 1/4 tsp - garam masala (optional)
  • Salt to taste
  • 2 tsp - lime juice
  • Red/orange colour.

How to Make Chicken and Vegetable Kebabs

  • Mix all the ingredients in the yogurt and keep for about 10 mins.
  • Marinate the chicken and vegetables in it for about an hour in the refrigerator.
  • String the skewers with alternate pieces of chicken and vegetables.
  • Place on a barbecue grill or bake in the oven for 15 mins
  • Remove from heat and coat the pieces with the remaining marinade.
  • Turn the oven to broil for another 5 - 10 minutes until the chicken is cooked well.
  • Serve hot.
