Ingredients

  • 250 gm chicken
  • 2 medium onions
  • 1 tbsp ginger and garlic paste
  • 2 dry red chillies
  • 2 green chillies
  • 1 small tomato
  • 1 tsp turmeric powder
  • 50 ml mustard oil
  • 10 cm long bamboo (big diameter)
  • 1 piece green banana leaf
  • coriander leaves

How to Make Chicken Bamboo

  • Cut one onion into thin slices.
  • Soak dry red chillies and grind them to paste with the other onion.
  • Cut green chilli into 1 cm pieces.
  • Mix turmeric powder, salt as per taste and medium sized chickens in a bowl and place it in a pre-heated hot water bath for 30 minutes.
  • No water should be added to the mixture.
  • Remove bowl from bath and add onion-chilli paste, sliced onion, ginger-garlic paste, green chilli, sliced tomato, mustard oil and some coriander leaves to the mixture.
  • Mix them well for 10 minutes with your hand.
  • Wrap the mixture in a banana leaf into a cylinder. Cover all the sides with the banana leaf.
  • Tie it with a cotton thread so that it doesn't unfold.
  • Place it inside the hollow space of a bamboo.
  • Cover both the open sides with mud and insert the bamboo in mild fire/coals.
  • Carefully watch it for 30-45 minutes.
  • When the bamboo is burnt completely, remove the mouth-watering delicious chicken and serve hot.
