Ingredients

  • 8 pieces - chicken
  • 2 - large onions, thickly sliced
  • 1/2 cup - orange juice
  • 1 tbsp - butter
  • Salt and pepper to taste
  • For sauce:
  • Drippings from the roasted chicken
  • 1 cup - orange juice
  • 1/2 cup - orange peel, boiled and drained
  • 1/2 cup - any jam
  • 1/4 cup - brown sugar
  • 2 tbsp - corn flour

How to Make Chicken in Orange Sauce

  • Chop onion, mix with orange juice, butter, salt and pepper. Mix the chicken well in this and marinate for an hour.
  • Roast in a pre-heated oven at 160 C for 20-25 mins.
  • Joint the roasted chicken. Lay the pieces on a flat plate.
  • Meanwhile, combine the sauce ingredients. Bring to a boil.
  • Pour the sauce over the chicken.
  • Heat thoroughly before serving.
  • Serve with garlic bread.
