Ingredients

  • 500g - boneless chicken breast
  • For the marinade:
  • 3 tbsp - lime juice
  • 1 tsp - white vinegar
  • 1 tbsp - olive oil
  • 1 tsp - sugar
  • 1 tbsp - crushed garlic
  • pepper - to taste
  • salt - to taste
  • For the salad:
  • 5 tbsp - chopped cucumber
  • 4 tbsp - finely chopped spring onions
  • 3 tbsp - chopped red capsicum
  • 2 tbsp - chopped fresh coriander
  • 1 tbsp - chopped raw mango
  • 1 tsp - lime juice
  • 1/2 tsp - oregano
  • salt to taste

How to Make Chicken Kebabs with Cucumber Salad

  • Cut the chicken into very thin pieces and thread onto the skewer.
  • Mix together all the ingredients to form a marinade.
  • Add the chicken to the marinade and keep aside for 30 minutes.
  • Preheat the grill to 180 degree C.
  • Arrange the chicken kebabs on the grill rack, and grill it for 5 minutes.
  • Turn the chicken over, brush with the marinade again, and grill till the chicken is done.
  • Meanwhile, mix all the ingredients of the salad.
  • Serve immediately with hot chicken kebabs.
  • You can also serve this with a small bowl of brown rice to make it a complete meal.
