1 - chicken, cut into 16 pieces
2 - onions, finely chopped
20 gm - parsley
2 - bay leaves
100 gm - almonds, peeled
1 - egg
10 gm - garlic, chopped
300 ml - chicken stock
100 ml - olive oil
Salt and pepper, to taste
How to Make Chicken pepitoria
Make a stock using the bones of the chicken.
Marinate the rest of the chicken pieces with salt and pepper.
Dip the chicken pieces in flour. Coat well.
Heat olive oil in a pan.
Add chicken pieces and saute on low fire till golden brown.
When done, place in a baking dish.
In the same pan, add chopped onions and saute.
Next, add garlic, bay leaves, parsley and chicken stock. Boil for 10 minutes.
Make a paste of almonds and add to the pan.
Pour over the chicken in the baking dish.
Cover the dish with foil and place in a medium hot oven for 10 minutes.
Garnish with slices of boiled egg and serve.
