The readily available ingredients - carrots, bread crumbs, green chillies, lemon, spring onions, green peas and butter make it a quick, healthy meal option. Toast the sandwich in between carrot mixture and green mixture and voila!

  • 1 cup shredded chicken
  • 6 potaotes, boiled and mashed
  • 2 tbsp. bread crumbs
  • 4 chopped green chillies
  • Salt to taste
  • For the carrot layer:
  • 2 large carrots, grated
  • Juice of 1 lemon
  • Salt to taste
  • Pinch of sugar
  • Mix, stand for 15 minutes, squeeze out excess water
  • For the green layer:
  • 2 spring onions, chopped
  • 1 cup boiled green peas
  • 2 green chillies
  • 1 tsp. chopped coriander
  • 1 tbsp. butter

How to Make Chicken Potato Sandwich

  • Grease both sides of a sandwich toaster well, take a little of the potato mixture and flatten it on a greased plastic sheet.
  • Place it gently in the sandwich toaster, put a spoonful of the carrot mixture followed by the green mixture.
  • Finally seal with another layer of the potato, applying a little oil on the edges.
  • Toast the sandwich till golden brown, remove gently, fix in a tomato, slice and serve hot with tomato sauce.
