  • 2 whole chicken breast
  • Salt as per taste
  • 1 tsp black pepper powder
  • 1 egg, hard boiled, grated finely
  • 1/4 cup roasted almonds
  • 1 tbsp finely chopped onion
  • 1/2 cup cooked cauliflower florets
  • 1/2 cup mayonnaise
  • 1 tbsp chopped coriander leaves
  • 3-4 lettuce leaves

How to Make Chicken Salad with Roasted Almonds

  • Marinate chicken with salt and pepper for half an hour.
  • Cook till tender, cool it, and make 1/2" cubes of the chicken.
  • In a bowl, add chicken, onion, and cauliflower.
  • Mix them well.
  • Break lettuce leaves and spread on the salad dish.
  • Pour the chicken mixture.
  • Sprinkle with grated egg, almonds, and coriander leaves.
  • Pour the mayonnaise over it.
  • Serve.
