  • 2 - medium to large ripe mangoes
  • 1 packet - gelatine (3 tsp)
  • 1/2 cup - hot water
  • 1/3 cup - white sugar
  • 1 cup - good quality coconut milk

How to Make Chinese Mango Pudding

  • Scoop out the mango pulp, including around the seed. Pour the fruit in a food processer or blender and blitz to create a smooth mango puree.
  • Leave the puree in the processer/blender.
  • Boil water in a saucepan and remove from the heat.
  • Sprinkle gelatin, stirring the water briskly with a whisk or fork so that no lumps are formed.
  • Add sugar to the mixture and stir to dissolve.
  • Add the mixture to the mango in the food processer/blender.
  • Add the coconut milk. Blitz briefly until the ingredients have combined.
  • Pour into dessert bowls or cups and place in the refrigerator for at least 2 hours.
  • Serve chilled with some fresh fruit.
