Ingredients

  • 600 g - prawns (cleaned with the shells)
  • 1/2 tsp - salt
  • 1 tsp - sesame oil
  • 1/4 tsp - pepper
  • 50 g - shredded young ginger
  • 4 tbsp - chicken stock
  • 1 - egg white (lightly beaten)
  • 1 tbsp - Chinese cooking wine (optional)
  • For the chilli sauce: 4 - red chillies (pounded)
  • 4 pips - garlic (pounded)
  • 1" piece - young ginger (pounded)
  • 1/4 tsp - salt to taste
  • 1 tsp - sugar
  • 1/2 tsp - sesame oil
  • 1 tbsp - lime juice

How to Make Chinese Style Steamed Prawns

  • Mix all the ingredients, except the egg white and wine, and marinate the prawns for 10 minutes.
  • Steam over high heat for about 8-10 minutes (depending on the size of the prawns).
  • Pour wine and egg white over the prawns and steam for another 1 minute.
  • Prepare the sauce by combining all the ingredients listed and marinate for an hour before serving.
  • Serve the prawns hot with chilli sauce.
