Ingredients

  • For Halwa filling:
  • carrots - 1/2 kg
  • Ghee - 3 tbsp
  • milk - 1/2 cup
  • condensed milk - 1/2 cup
  • cardamom powder - 1/2 tsp
  • cashew nuts - 2 tbsp, chopped
  • saffron 1 pinch
  • For cake:
  • eggs 2, separated
  • flour - 1 cup
  • baking powder - One and a half tsp
  • cocoa - 4 tbsp
  • hot water - 5 tbsp
  • milk - 75 ml
  • powdered sugar - 3/4 cup
  • vanilla essence - 1 tsp
  • butter - 1/2 cup
  • salt 1 pinch

How to Make Chocolate Halwa Sandwich Cake

  • For Halwa filling:
  • Wash, peel and grate the carrots.
  • Heat Ghee, fry cashew nuts till brown, drain and reserve.
  • Add carrots to the same pan and saute them till wilted.
  • Add milk and cook covered on a low flame till carrots are soft.
  • Add condensed milk and cook uncovered, stirring, till the mixture forms a thick lump.
  • Remove from fire, stir in the nuts, cardamom and saffron.
  • For cake:
  • Mix flour with salt and baking powder.
  • Mix cocoa with hot water.
  • Add milk and 1/4 cup of sugar.
  • Mix well. Cook and stir on a low flame till the mixture begins to boil.
  • Avoid over cooking. Add the essence. Allow to cool.
  • Beat butter with remaining sugar. Add the egg yolks one by one, beating well after each addition.
  • Fold in the Maida alternately with the cooled sauce.
  • Gently fold in the stiffly beaten egg whites.
  • Pour in a prepared cake tin and bake in a mode oven (170 degrees centigrade) till done (30 mins).
  • Cool and cut horizontally into two slices. Sandwich the slices with the halwa.
  • Sprinkle some icing sugar on top and serve sliced.
