  • 1 pound sole fillets
  • 1 bay leaf, crumbled
  • 1 tsp. paprika
  • 1 tsp. salt
  • ¼ tsp. mustard seeds
  • 1 fresh or pickled green chilli, finely chopped
  • ¼ tsp. cloves
  • 1 ½ cups thick coconut milk
  • 4 tbsp. vegetable oil
  • 2 medium onions, thinly sliced
  • ½ tsp. grated ginger
  • 1 tbsp. white vinegar

How to Make Coastal Fish Curry

  • Dry fish between paper towels and cut into 2 ½ inch pieces. Combine paprika and salt.
  • Rub this mixture into the fish.
  • Heat the oil and fry fish until lightly browned.
  • Remove and set aside. Add the sliced onions to pan and fry until brown.
  • Add ginger, bay leaf, mustard seeds, green chilli and cloves, and fry for 2 or 3 minutes.
  • Add coconut milk and fish. Simmer for about 10 minutes.
  • Remove from heat and stir in vinegar. Serve hot.
