Ingredients

  • 1/2 cup - each of soft butter and sugar
  • 1 cup and 1 1/2 tbsp - sifted refined flour
  • 2 - eggs, beaten
  • A big pinch of salt
  • 1 cup - brown sugar
  • 1/2 tsp - baking powder
  • 1 cup - shredded coconut
  • 1/4 cup - each of chopped walnut, almonds, groundnuts and cashewnuts

How to Make Coconut Bars

  • Cream together butter and sugar.
  • Mix in 1 cup and 1 1/2 tbsp. flour and mix thoroughly.
  • Put in a well-greased baking pan and bake in a mode oven for 20 mins.
  • While it is baking, beat the eggs well, mix in the remaining ingredients with the exception of coconut.
  • Spread over the partly baked bottom, sprinkle coconut on top and continue baking till a knife inserted in the centre comes out clean.
  • Cut into small slices while still warm.
  • Cool and store in airtight tin.
