  • 2 cup - desiccated coconut
  • 1.5 cup - splenda
  • Ghee or non-stick spray
  • Nuts like almonds, cashew, pine nuts

How to Make Coconut Cake for Diabetics

  • Grease the microwaveable pan with non-stick spray
  • Put the desiccated coconut, microwave for a minute and stir it.
  • Now add the splenda (artificial sweetener), stir and microwave for 2 mins
  • Take it out, cool and stir.
  • Spray the non-stick oil on the mixture and microwave for a minute
  • Fry the nuts in the microwave in another dish by spraying with the fat free non-stick oil
  • Then add the nuts to the coconut mixture and make small balls while still warm
