Ingredients

  • 1 cup - rice
  • 2.5 cups - coconut milk
  • 1 - onion, chopped
  • 2 to 3 - green chilli
  • 1/2 tbsp - ginger garlic paste
  • 1 - bay leaf
  • 4 - cloves
  • 2 inch - cinnamon
  • 2 - cardamom
  • 2 tbsp - ghee
  • To taste - salt

How to Make Coconut Milk Rice

  • Wash rice well and soak in salt water for 30 minutes.
  • Heat ghee in a heavy or non-stick pan.
  • Add all the spices and fry, till you get the aroma.
  • Add onion and fry till golden brown.
  • Then add ginger garlic paste and fry till the raw smell goes away.
  • Add the split chillies.
  • Now add the rice and fry for a couple of minutes.
  • Add the coconut milk and salt.
  • Bring to a boil.
  • Simmer covered, till rice is cooked and water evaporates.
  • The rice can be served hot with any spicy vegetarian or non vegetarian gravy.
