Ingredients

  • 1 - grated coconut
  • 3-4 tsp - coconut oil
  • 3 - green chillies chopped fine
  • 1 - small piece of ginger chopped fine
  • 1 tsp - urad dhal
  • 1 tsp - channa dhal
  • 1 tsp - mustard seeds
  • 1 tsp - ghee
  • 2 tbsp - cashew nuts
  • 1 sprig - curry leaves
  • Salt to taste
  • 2.5 cup - basmati rice
  • 5 cup - water
  • Chopped coriander - for garnish

How to Make Coconut Rice for parties

  • Cook the rice in 5 cup of water and set aside
  • Heat 1 tsp of coconut oil in the sauce pan and add grated coconut
  • Fry for 3-4 minutes till coconut becomes dry. Take it out and keep aside.
  • Add remaining coconut oil and mustard seeds.
  • Once the mustard seeds splutter, add urad dhal, channa dhal, green chillies, ginger and curry leaves.
  • Fry till the dal becomes brown. Remove it and keep aside.
  • Add some ghee in the pan and fry the cashewnuts till golden brown.
  • Take a bowl and add cooked rice, salt to taste, coconut, tempering and mix them well.
  • Top with cashewnuts and coriander
  • Serve hot
