Ingredients

  • 6 cups - chicken stock
  • 2 cups - fresh peas
  • 1 cup - cream
  • 3/4 cup - onions, chopped
  • 1/2 cup - chopped mint
  • 1/4 cup - chopped celery
  • 3/4 tsp - ground cloves
  • 2 bay leaves
  • 2 tbsp - lemon juice
  • salt and pepper

How to Make Cold Mint Soup

  • Boil peas in chicken stock until the peas are tender.
  • Add the chopped onions, chopped celery, ground cloves, bay leaves, chopped mint, salt and pepper.
  • Boil until the onions are tender, then sieve and chill.
  • Add the cream and lemon juice to the soup before serving.
  • Garnish with mint sprigs.
