  • 12 tacos shells
  • ¼ medium cabbage, shredded
  • 1 medium carrot, grated
  • 1 small green capsicum, cut into thin strips
  • 1 small yellow capsicum, cut into thin strips
  • 1 small red capsicum, cut into thin strips
  • 50 grams cottage cheese, cut into small cubes
  • Salt to taste
  • Black pepper powder to taste
  • ¼ cup Nutralite Veg Mayonnaise
  • 2 tablespoons tomato ketchup
  • 1 spring onion, cut into thin strips

How to Make Coleslaw Tacos

  • Mix the cabbage, carrot, green capsicum, yellow capsicum, red capsicum, cottage cheese, salt and pepper powder in a bowl.
  • Mix Nutralite Veg Mayonnaise and tomato ketchup in another bowl.
  • Place a tablespoon full of the vegetable mixture into each taco shell.
  • Drizzle a little of the mayonnaise mixture, garnish with the spring onions and serve immediately.
