  • Fresh coriander: 3 bunches
  • Green chillies: 10
  • Tamarind: as needed
  • Salt: 3 tsp
  • Small brinjals: 10
  • Oil: 5 tbsp

How to Make Coriander-stuffed Brinjal

  • Cut the brinjals in 4, but with pieces still attached at the stalk.
  • Grind coriander, chillies, tamarind and salt to a thick paste.
  • Stuff this mixture in the brinjals.
  • Heat oil and fry the stuffed brinjals till cooked well.
