  • 325 g - baby corn (each sliced into 3 pieces)
  • 350g - snow peas
  • 6 eggs, boiled and sliced lengthwise into 2 pieces
  • 3 tbsp - chives, finely chopped
  • 270 ml - mayonnaise
  • 1 tsp - Dijon mustard
  • 1 red or yellow capsicum
  • 1 green capsicum

How to Make Corn and snowpeas salad

  • Rub oil on the capsicum and place under a very hot grill until the skin of the peppers is charred and blistered
  • Rub off skin under cold running water.
  • Dry the capsicum with absorbent paper towels and cut into 1-inch pieces.
  • Blanch the snowpeas in boiling, salted water for 2-3 mins. Drain.
  • Refrigerate the corn, snowpeas and capsicum for a while.
  • Mix the mayonnaise and djon mustard with the chilled corn, snowpeas and capsicum.
  • Sprinkle chives and garnish with eggs.
