  • 1 cup - dry couscous
  • 1.5 cups - water
  • 1 - onion
  • 1 - tomato
  • 1 cup - peas
  • a few curry leaves
  • 3-4 - green chillies
  • a few cilantro leaves
  • a little vegetable oil
  • 1 tsp - mustard seeds
  • 1 tsp - urad dal
  • 1 tsp - chilli powder
  • salt and sugar to taste

How to Make Couscous Upma

  • Heat a non-stick pan and add 2 tbsp of vegetable oil.
  • Add the mustard seeds and let them splutter.
  • Add urad dal, curry leaves and finely-sliced green chillies. Saute until the dal turns light brown.
  • Add thinly sliced onions and stir until they turn waxy and transparent.
  • Add the chopped tomatoes with the peas.
  • Add salt, sugar and chilli powder and mix well.
  • Add water and boil for a few minutes.
  • Add the couscous, mix well, turn the heat to low and simmer until all the water is absorbed.
  • Fluff, add chopped cilantro leaves and serve hot or cold.
