Ingredients

  • 100 g - boneless chicken breast
  • 1 - 2" piece of spring onion
  • 1 slice - fresh ginger
  • 100 g - crab meat
  • 12 - snow peas
  • 6 - button mushrooms
  • 1 tbsp - lemon juice
  • 5 - lettuce leaves
  • For the dressing: 1/2 tbsp - dry mustard
  • 1 tbsp - vinegar
  • 1/2 tbsp - sugar
  • 1/4 tsp - salt
  • 1 tbsp - sesame oil
  • a few lettuce leaves

How to Make Crabmeat and Chicken Salad

  • Steam the chicken, spring onion and ginger for about 20 minutes.
  • When the chicken cools down slightly, shred into long bite-sized pieces.
  • Crumble the crab meat into flakes.
  • Remove tough strings from the snow peas and blanch quickly about 2 minutes. Rinse in cold water and drain well.
  • Cut the mushrooms and crown into 2-3 slices.
  • Sprinkle them with lemon to keep the colour.
  • Combine the ingredients for the dressing and mix well.
  • Spread lettuce leaves on a plate.
  • Lightly toss the snow peas, mushrooms, chicken and crab meat together and place on top of the lettuce.
  • Pour dressing before serving.
