  • Cracked wheat (Tuta Genhun, Gothum rava) - 1 cup
  • Water or as needed - 2 cups
  • Sesame oil (also called til oil or nalla ennai) - 3 tbsp
  • Mustard seeds - 1/2 tsp
  • Channa dal - 2 tsp
  • Whole red chilies - 4
  • Roasted and unsalted peanuts - 1/4 cup
  • Dry methi leaves (kasoori methi) - 1 tsp
  • Curry leaves or cilantro leaves - a few
  • Turmeric powder - 1/2 tsp
  • Asafoetida - 1 pinch
  • Water - 1/4 cup
  • Salt - 1 tsp
  • Tamarind concentrate - 2 tbsp
  • Grated carrots - 1/2 cup

How to Make Cracked Wheat Puliogare

  • Heat a pan with water add the cracked wheat and cook until it has become soft and cooked.
  • Takes about 15 minutes. After it is cooked keep it aside to cool for about 10 minutes.
  • To Season:
  • Heat a pan with 3 tbsp of oil.
  • Add mustard seeds, channa dal and whole red chilies and wait for the mustard seed to pop.
  • When the mustard seeds pop add the turmeric powder, asafoetida, dry methi leaves and curry leaves saute for a few seconds.
  • Along with this, add the roasted peanuts and saute gently. Add water and salt and let the water come to a boil. Add the tamarind concentrate(paste) and let it mix well.
  • When the water starts boiling, add the cooked cracked wheat mix thoroughly and serve.
  • As a option, you can add grated carrots at the end.
