Ingredients

  • 1 cup - cracked wheat
  • 1 tsp - salt
  • 2 - green chilli
  • 3 - cashews
  • 1 - dry red chilli
  • 1 tsp - ghee
  • 1/2 tsp - mustard seeds
  • 1/2 tsp - urad dal
  • 1 - small piece of ginger
  • a few curry leaves
  • 1 tsp - cooking oil
  • 1/2 - lemon
  • 1 - medium-sized onion
  • 8-10 - beans
  • 1 - carrot
  • 1/4 cup - green peas

How to Make Cracked Wheat Vegetable Upma

  • Cut all the vegetables into tiny pieces.
  • Heat oil and fry the mustard seeds, dal and dry red chilli.
  • Cut the cashews, green chillies and ginger into small pieces and fry slightly.
  • Add the onion and saute until tender.
  • Add the chopped vegetables and stir well for a couple of minutes.
  • Add 1 cup of water, cover and cook the vegetables.
  • When the vegetables are more than half-cooked, add 1 more cup of water, salt and the curry leaves and let the water heat up.
  • When the water boils, add the cracked wheat, continuously stirring all the while.
  • Add the ghee and mix well, taking care that the upma is not in lumps.
  • If the wheat is not cooked, sprinkle some more water and mix well.
  • Set aside for 5 minutes.
  • Add the juice from 1/2 lemon and mix well.
  • The upma will now be loose and not sticky. Serve hot.
