Ingredients

  • 8 hard-boiled eggs (quartered)
  • 1/4 cup - butter
  • 1/4 cup - flour
  • 1.5 cups - milk
  • 1/2 cup - thick cream
  • 2 tbsp - finely chopped coriander leaves
  • 1 tsp - chilli powder
  • 1 cup - minced capsicum
  • 1/2 cup - minced onions
  • Salt and pepper to taste

How to Make Creamed Eggs

  • Melt the butter in a saucepan and remove from the fire.
  • Blend in the flour and gradually add the milk and cream.
  • Return pan to fire and stir constantly until it thickens.
  • Add all the remaining ingredients and stir well.
  • Makes 4 servings.
