  • ½ cup gram flour
  • 1 tbsp. semolina or ground rice
  • ½ tsp. onion seeds
  • 1 tsp. cumin seeds
  • ½ tsp. fennel seeds or aniseeds
  • 1 tsp. hot chilli powder
  • ½ tsp. salt or to taste
  • 1 large aubergine (eggplant)
  • Vegetable oil for deep frying

How to Make Crisp Fried Aubergine

  • Sift the gram flour into a large mixing bowl and add the semolina or ground rice with the onion and cumin seed, fennel or aniseeds, and the hot chilli powder and salt.
  • Halve the aubergine lengthways and cut each half into 1 inch thick slices.
  • Rinse them and shake off the excess water, but do not pat dry.
  • With some of the water still clinging to the slices, add them to the spiced gram flour mixture.
  • Toss them around until they are evenly coated with the flour.
  • Use a spoon if necessary to ensure that all the flour is used.
  • Heat the oil in a wok. Fry the spiced aubergine slices in a single layer.
  • Avoid overcrowding pan as this will lower the oil temperature, resulting in a soggy texture.
  • Fry until the aubergines are crisp and well browned.
  • Drain on kitchen paper and serve with a chutney.
