Ingredients

  • Lobia (cowpea) - 250g
  • Raw rice - 3 tsp (soaked for 4 to 5 hours)
  • Green chillies - 4, chopped fine
  • Onions - 2 medium-sized, chopped fine
  • Chopped ginger - 1 tsp
  • Curry leaves - 2 tsp, chopped
  • Coriander leaves - 1 tbsp, chopped
  • 2 - cloves
  • 3 - cloves of garlic
  • A small bit of cinnamon, crushed roughly
  • A pinch - aniseed (optional)
  • Salt
  • Oil for frying

How to Make Crispy Lobia Vada

  • Grind lobia along with rice to vada consistency (medium coarse). Usually no water is required while grinding.
  • Add all the ingredients except the oil for frying.
  • Make a small vada (on a plastic paper) with a hole in the centre and deep-fry in oil till golden brown in colour.
  • Can be served with any pickle or chutney (best with chicken kurma for non-vegetarians).
