Ingredients

  • white cabbage - 1 cup, shredded
  • red cabbage - 1 cup, shredded
  • leeks - ½ cup, sliced
  • carrot - 1 cup, peeled and grated
  • green capsicum - ½ cup, cut into strips
  • apple - 1, peeled, cored, and chopped
  • raisins - 2 tbsp
  • roasted cashew nuts - 3 tbsp, chopped
  • olive oil - ¼ cup
  • balsamic vinegar - 2 tbsp
  • honey - 1 tbsp
  • yellow mustard - 1 tbsp
  • parsley - 2 tbsp, chopped
  • pepper to taste
  • salt to taste

How to Make Crunchy Slaw

  • Combine all the ingredients from white cabbage to cashew nuts.
  • Mix together oil, vinegar, honey, mustard, salt, and pepper.
  • Pour over the vegetable mixture and toss well.
  • Sprinkle parsley on top.
