  • onion - 1 big
  • capsicum - 1 medium
  • carrot - 1 medium
  • cauliflower - a few florets
  • tomato puree - from 2 medium ripe tomatoes
  • slit green chillies - 3
  • ginger-garlic paste - 1 tsp
  • tomato ketchup - 2 tsp
  • pepper - 1/2 tsp
  • water- 1/2 cup
  • salt to taste

How to Make Crunchy Vegetables

  • Cut all the vegetables into squares. Heat oil and add the onion pieces. Saute well till they change colour.
  • Add green chillies and then the ginger-garlic paste.
  • Saute well for 2 to 3 minutes till the raw smell of the ginger-garlic leaves.
  • Add capsicum and saute well.
  • Then add carrot and add the salt and the pepper.
  • Mix all the vegetables together and simmer.
  • In the meanwhile, prepare the puree and add the ketchup to it.
  • Mix with 1/2 cup of water and add to the veggies.
  • Cook with lid on.
  • You can reduce the quantity of water if you want your veggies crunchier.
