Ingredients

  • Potatoes - 2 big
  • Cucumbers - 3
  • Tomato - 1 (big)
  • Green peas - 1/4 cup
  • Green chillies - 5
  • Mint - 3 stalks
  • Coriander - to garnish
  • Grated coconut - 4 tbsp
  • Garam masala - 1/2 tsp
  • Red chilli powder - 1/2 tsp
  • 3 tsp - oil

How to Make Cucumber Aloo Kurma

  • Grind mint, chillies, peas and 2 tbsp coconut powder by adding little water.
  • Grate 2 cucumbers and cut one into big chunks.
  • Peel the potatoes and cut into big chunks.
  • Put the whole tomato, the grated cucumber and potato chunks in a pressure cooker with a little water and 2 tbsps coconut powder and cook for 2-3 whistles.
  • When it is cool, remove tomato skin and mash with a spoon.
  • Heat oil in a kadai, splutter, jeera and mustard. Add ground mint and the cooked vegetables.
  • Cook for some time on medium heat till it reaches required consistency.
  • Add salt, chilli powder, garam masala, and cook for another minute. Garnish with coriander leaves.
