Ingredients

  • 3 medium cucumbers
  • 2 medium carrots
  • 1/2 cup - sweet corn
  • 1/2 cup - green peas
  • 4 chopped green chillies
  • 1 medium capsicum
  • 2 medium tomatoes
  • 3 tbsp - cashew nut powder
  • 2 tbsp - coconut, grated
  • 1/2 tsp - mustard seeds
  • 1/2 tsp - sugar
  • 1 tsp - raisin
  • 1 tbsp - lemon juice
  • a few curry leaves
  • 3 tbsp - refined oil
  • salt to taste

How to Make Cucumber boats

  • Peel and halve cucumber lengthwise and deseed.
  • Cut off a thin slice from under each half so the cucumber can be placed flat.
  • Heat oil in a pan.
  • Add mustard seeds, curry leaves, and grated coconut.
  • Add chopped carrots, chillies, peas, sweet corn, cashew nut powder, raisins, and salt.
  • Cook for 8 to 10 minutes over a low flame till the vegetables are tender.
  • Add sugar and stir for a minute.
  • Remove from heat. Add lemon juice and mix well.
  • Fill cucumber boats with the mixture.
  • Decorate with sliced tomatoes and capsicum.
