Ingredients

  • Raw rice - 1.5 cups
  • Tender cucumber - 350 - 400 g
  • Grated coconut - 1/2 cup
  • Green chillies - 2 tsp, minced
  • Ginger - 1 tsp, minced
  • Jaggery - 1 tbsp, powdered
  • Turmeric powder - 1/2 tsp
  • Sour curds - 1/2 cup
  • Salt to taste

How to Make Cucumber Kadubu

  • Wash and soak rice in water for 1-2 hours
  • Drain and spread on a cloth until dry
  • Dry grind in a mixer until fine
  • Now peel and grate the cucumber
  • Squeeze out the water in a bowl
  • Grind the coconut with this water to a coarse paste
  • Mix the ground rice with the coconut paste
  • Add the remaining ingredients
  • The consistency of the batter should be slightly thicker than an idly batter
  • Now grease a deep plate and pour the batter
  • Steam for 15 minutes. Cool a little, cut into pieces and serve.
