Ingredients

  • 1 medium-sized cabbage (about 1 kg)
  • 1 onion
  • 2 cooking apples
  • 50g - butter or margarine
  • 1-2 level tsp - Curry powder
  • Salt and pepper
  • 150ml - natural yogurt
  • 1/2 level tsp - finely chopped fresh mint
  • 25g - salted peanuts
  • 50g - sultanas

How to Make Curried cabbage

  • Wash and shred cabbage, discarding the tough centre core.
  • Peel and chop onion and apples.
  • Melt butter or margarine in a saucepan, add onion, and fry gently until soft.
  • Add apple and cabbage and stir over a moderate heat for 5 minutes.
  • Stir in curry powder and seasoning.
  • Cover and cook gently for 10 minutes, shaking the pan from time to time.
  • Stir in yoghurt, mint, peanuts, and sultanas.
  • Reheat gently and serve hot.
  • For a new way to give the cabbage a lift, if you like really spicy dishes, use a larger amount of curry powder.
