Ingredients

  • 1 tbsp. sunflower oil
  • 1 tbsp. mild curry powder
  • 500 gms. carrots, chopped
  • 1 large onion, chopped
  • 2 cooking apples, chopped
  • 3 cups vegetable stock
  • Salt and ground black pepper to taste
  • 2 tbsp. plain yoghurt and a few carrot curl for garnishing

How to Make Curried Carrot and Apple Soup

  • Heat the oil in a large heavy pan.
  • Add the curry power and let fry for 2-3 minutes.
  • Add the carrots, onions and cooking apples and stir well until coated with the curry powder. Cover the pan.
  • Cook over low heat for 15 minutes, stirring the pan occasionally until soft.
  • Spoon the vegetable mixture into a food processor or blender, then add half the stock and process until the mixture is smooth.
  • Return to the pan and pour in the remaining stock.
  • Bring the soup to the boil and adjust the seasoning before serving in bowls, garnished with a swirl of yoghurt and a few carrot curls of raw carrot.
