  • 6 eggs
  • 1 cup - cooked mincemeat/shredded chicken
  • 1/2 cup - onion, minced
  • 2 tbsp - oil
  • 1 tsp - ginger, minced
  • 2 green chillies, minced
  • 1/2 tsp - turmeric powder
  • 1/2 tsp - cumin powder
  • 1 tsp - coriander powder
  • 2 tbsp - butter or oil
  • salt and pepper
  • salt to taste

How to Make Curried Omelette

  • Heat the oil, fry onion and ginger till fragrant.
  • Add green chillies and all the powders.
  • Fry for few seconds. Add the meat and salt.
  • Cook and stir for 1 minute and remove from fire.
  • Beat the eggs lightly and season with salt and pepper.
  • Heat on a big, thick based omelette pan and pour the eggs.
  • When they begin to set, place the meat mixture on one 1/2 of the omelette.
  • Gently fold over the other half to cover the filling.
  • Carefully turn over and cook the other side for 2 minutes. Serve hot with toast.
