  • 1 small onion, skinned and chopped
  • 2 tsp. curry powder
  • 4 eggs
  • 1 tsp. chopped parsley
  • 3 tbsp. milk
  • Salt and freshly ground black pepper
  • 2 large slices buttered toast
  • 1 tsp. oil for frying

How to Make Curried Scramble

  • Fry the onion in the oil until soft but not coloured, then add the curry powder and fry slowly for 5 minutes. Beat together the eggs, parsley, milk and seasoning.
  • Add to the pan and cook gently, stirring continuously and lifting the egg from the bottom of the pan. Serve on hot buttered toast.
