Ingredients

  • 1/2 cup - fresh dates, stoned
  • 6 tbsp - flour
  • 1/4 cup - softened butter
  • 1 cup - milk powder
  • 2 tbsp - finely grated orange rind
  • 3 - eggs, separated
  • 3 tbsp - sugar
  • For the Orange Sauce:
  • 1/4 cup - sugar
  • 1 tbsp - corn flour
  • 1 cup - orange juice
  • 2 tbsp - finely grated orange rind
  • 1/2 cup - cream

How to Make Date Souffle with Orange Sauce

  • Puree dates in blender or food processor.
  • Mix with flour and butter.
  • Heat milk until nearly boiling and gradually stir into date mixture.
  • Cook over hot water for about 5 minutes, stirring constantly.
  • Add orange rind.
  • Beat egg yolks until thick and beat in sugar gradually.
  • Stir in hot mixture slowly. Cool.
  • Fold in stiffly beaten egg whites, pour into greased souffle dish, place in pan of hot water and bake at 160 degrees C for 1 hour until set.
  • Serve with orange sauce.
  • To Make Orange Sauce:
  • Mix sugar and corn flour in saucepan.
  • Add orange juice and rind and cook over medium heat, stirring constantly.
  • Cover and cook over boiling water for 10 more minutes.
  • Just before serving, stir in cream.
