  • 200 gm - dates, seedless
  • 100 gm - apricots
  • 100 gm - mango (aam) papad cut into small pieces
  • 150 gm - jaggery
  • 1 tbsp. - sugar
  • 1/2 tsp - red chilli powder
  • 1 bay leaf
  • 1 inch piece - cinnamon
  • 1/2 a star anise
  • 2 cardamoms

How to Make Dates, apricot, aam papad and jaggery relish

  • Heat 200 ml water, add the whole spices and boil for 2-3 mins.
  • Reduce heat and mix in the dates (cut into halves), apricots (also cut into halves) and the aam papad pieces. Continue to boil over low heat for at least 7-8 mins.
  • The dates should retain their shape but feel tender to touch. Add the chilli powder and the jaggery (broken to small pieces).
  • Stir till the jiggery melts and add sugar. Stir and cook till the desired consistency is reached.
