Ingredients

  • 1 spring chicken
  • 1 onion chopped
  • ½ cup sherry
  • Salt to taste
  • 1 tsp. sugar
  • 2 tbsp. sesame oil
  • ¼ cup soya sauce
  • 2 tbsp. refined flour
  • Oil for frying

How to Make Deep Fried Spring Chicken

  • Joint chicken and cut into about a dozen pieces.
  • Mix onion, oil, soya sauce, sherry, a little salt and sugar together.
  • Pour over chicken. Let it stand for at least an hour.
  • Remove chicken, dip pieces in flour and fry in hot oil for 5-6 minutes until golden brown.
  • Serve with a sauce made of stock flavoured with fried spring onion, garlic and chillies and thickened with cornflour.
  • Serve with noodles.
