Ingredients

  • 4 cups - mixed vegetables (Carrots, Potato, Cauliflower, Beans and Peas)
  • Salt to taste
  • 1 tbsp - garam masala powder
  • 3 tbsp - ghee or oil
  • A pinch of sugar
  • Masala powder (fry and powder):
  • 1 tsp aniseeds
  • 2 cardamoms
  • 1 - cinnamon
  • 1 - bay leaf
  • 10 - cashewnuts
  • To grind together:
  • 5 flakes garlic
  • 8 green chillies (fry both with little oil)
  • 5 tbsp - coconut scrapings
  • 1 inch - ginger
  • 1 big onion
  • 1 bunch - coriander leaves
  • For garnish -
  • Some coriander leaves
  • A dash - lime juice

How to Make Delightful Vegetable Kurma

  • Heat some oil in a pressure cooker. Fry the vegetables in ghee.
  • Add the ground masala with enough water, salt, garam masala and sugar.
  • Cook for 7 mins.
  • Sprinkle over the masala powder, mix well.
  • Garnish with coriander leaves and lime juice if desired. Serve hot.
