Ingredients

  • 2 - large avocados, peeled and finely chopped
  • 1 sprig - spring onion greens, finely chopped
  • 1 tsp - coriander leaves, finely chopped
  • 1 tsp - mint leaves, finely chopped
  • 1 - green cabbage leaf, finely chopped
  • 1/4 cup - peanuts or almonds, skinned, roasted, coarsely crushed
  • 1 tbsp - lemon juice
  • For the dressing: 1 tbsp - white vinegar
  • 1 tbsp - corn syrup/ honey/ soft brown sugar
  • 1/4 tsp - mustard powder (yellow)
  • 1 tiny sprig - dill leaves, finely chopped
  • 2 tbsp - olive oil
  • 1/2 tsp - pepper
  • salt to taste

How to Make Dressed Avocado Salad

  • Sprinkle lemon juice over the avocados and toss lightly. Chill till required.
  • Add all the other ingredients.
  • Mix and refrigerate till serving time.
  • For the salad dressing: Mix all ingredients well. Add to the avocado mixture. Toss lightly and serve immediately.
