Ingredients

  • 1 kg - dudhi
  • 300 g - sugar
  • 1 litre - milk
  • 10 tbsp - ghee
  • 10 cardamoms (powdered)
  • 15 to 20 strands saffron (soaked in 1 tbsp milk for few minutes)
  • 8 to 10 sliced almonds for garnishing

How to Make Dudhi I Jo Seero (Lauki Ka Halwa)

  • Wash and grate the dudhi .
  • Squeeze out the water from the grated dudhi.
  • Lightly heat ghee in a heavy bottomed vessel and fry the dudhi on a medium flame, till ghee separates.
  • Add milk, powdered cardamoms and saffron.
  • When the mixture is fairly dry, add the sugar and cook for another 10 minutes.
  • Place the vessel on a preheated tava and let it simmer for 5-7 minutes.
  • Garnish with sliced almonds.
