Ingredients

  • 1 ½ cups grated unsweetened coconut
  • 4 cloves
  • 1 inch stick of cinnamon
  • 2 tsp. salt
  • ½ cup ghee
  • ½ cup cashewnuts, coarsely chopped
  • 1 small onion, thinly sliced
  • 2 tbsp. chopped green pepper
  • 1 clove garlic, crushed
  • 2 whole cardamoms
  • ¼ tsp. cayenne pepper
  • 2 cups long grain rice
  • 1 large tomato, peeled and chopped

How to Make Easy Coconut Rice

  • Combine 1 cup of the unsweetened coconut with 4 cups water and bring to a boil. Remove from heat and let stand for 20 minutes.
  • Strain, reserving the liquid for cooking the rice. Be sure to press out all excess moisture from coconut.
  • Melt ghee and sauté onions until golden. Add chopped green pepper, garlic, cardamoms, cloves, cinnamon, salt, cashewnuts and cayenne pepper.
  • Fry for 2 or 3 minutes. Add rice and stir for another 3 minutes.
  • Meanwhile, bring the reserved coconut liquid to a boil and add the tomato, remaining ½ cup of coconut, and the hot, sautéed rice mixture.
  • Stir. Cover tightly and steam until the rice is done.
