Lauki ka raita is a healthy and nutritious raita made from bottle gourd. The raita is a great accompaniment to your lunch or dinner and is loved for its unique taste.

This vegetarian raita takes very less time to make and is loved by everyone. You can learn how to make it at home and enjoy it with your usual meal buffet. Raita is made from bottle gourd which is finely grated. A pinch of hing along with cumin seeds will give the magical aroma to the raita.

Also, you can take nicely set curd and mix little milk with it to make an even consistency. Raita can be made by stir frying the cumin, green chilies and coriander leaves after which lauki is added. Curd is added in the lauki and spice mix and is refrigerated for some time before it is served.

  • 1 cup - Yoghurt, approx 1/2 cup milk as needed
  • 1 cup - Lauki, grated (bottle gourd)
  • 2 tsp - Oil
  • 1 tsp - Cumin seeds powder (jeera)
  • 1/8 tsp - Asafoetida (hing)
  • 2 - Whole red chillies
  • 1 tsp - Ginger (finely chopped)
  • 1 tsp - Green chilies, finely chopped
  • 3 tbsps - Coriander leaves, finely chopped
  • 1/2 tsp - Salt

How to Make Easy Lauki Ka Raita

  • Whip the yoghurt and add the milk as needed to make the consistency of pancake batter, set aside.
  • Heat the oil in a saucepan on medium high heat.
  • Add the cumin seeds and asafoetida.
  • After the cumin seeds crack, add red chillies, stir fry for a few seconds.
  • Add lauki, ginger, green chllies, coriander leaves and stir fry until most of the water has evaporated and lauki is tender.
  • This should take about 4 to 5 minutes.
  • After the lauki cools, mix it well into the yoghurt.
  • Add more milk if needed.
  • For best results, serve chilled.
