Ingredients

  • 1 cups - prawns
  • 1 to 2 tsp - cumin + black pepper powder
  • 1 to 2 tbsp - ginger + garlic + green chilli paste
  • 3 to 4 - brinjals (each cut into 4 long pieces)
  • 1 - onion, cut finely
  • Few curry leaves
  • 2 - green chillies, slit (optional)
  • 2 - tomatoes, cut finely
  • 1 tsp - red chilli powder
  • 1 tbsp - coriander powder
  • 1/2 tsp - turmeric powder
  • 1 big cup - coconut milk
  • 1 - small lemon size tamarind soaked in 1/2 small cup of water
  • 4 to 5 tbsp - Oil for frying
  • Salt to taste

How to Make Easy Prawns Curry

  • Wash the prawns well and keep aside in a vessel.
  • Heat the oil and fry the brinjal on high fire till it is slightly brown. Keep aside.
  • In the same oil, fry the onions till they turn pink. Then add curry leaves and slit green chillies.
  • Add ginger-garlic-green chilli paste, and fry for some time.
  • Add the finely cut tomatoes and fry for 3 minutes.
  • Now add the grind cumin + pepper powder, red chilli powder, coriander powder, and turmeric powder. Fry well till the masala is cooked.
  • Now add the prawns and fry for 5 minutes.
  • Add the coconut milk and cook till it boils.
  • Add the tamarind pulp and salt to taste.
  • Cook on a slow gas with the vessel covered. Cook till the prawns are cooked.
  • Add the fried brinjal to the curry and cook for 3 to 4 minutes.
  • To make this dish more spicy, you can add more red chilli powder.
  • Serve with rice.
