Ingredients

  • 4 to 5 - ripe tomatoes
  • 50 g - grated carrot
  • 50 g - grated cabbage
  • 50 g - grated capsicum
  • salt to taste
  • 1/4 tsp - turmeric powder
  • 1 tsp - coriander powder
  • 1 tsp - red chilli powder
  • 1 tsp - kitchen king masala
  • 1cup - coriander leaves
  • oil for cooking

How to Make Easy Stuffed Tomatoes

  • For the stuffing:
  • Heat 1 tsp oil in the pan, add the grated vegetables, spices and salt. Mix well, cover and cook.
  • Cut the top off the tomatoes, scoop out the seeds.
  • Stuff the tomatoes with the cooked vegetables.
  • Heat 2 tsp oil in a pan, place the stuffed tomatoes, cover and cook till the tomatoes are tender.
  • Garnish with coriander leaves.
